This professional three stage sharpener uses 100% DiamondPlus™ commercial grade abrasives and combines interdigitating diamond pads and conical diamond coated disk technology to apply Chef'sChoice®'s proprietary CrissCross® edge.

Our CrissCross® technology applies an extremely sharp, long-lasting edge with lots of "bite." In addition to the diamond encrusted interdigitating pads in Stages 1 and 2, Stage-3 features diamond coated conical wheels that sharpen simultaneously “into” and “out-of” the edge for a superior edge that is burr-free, razor sharp and cuts effortlessly!

Our diamond abrasive pads and wheels hold their shape indefinitely (unlike ceramic wheels which lose shape over time)―and the durable diamond abrasives last and last.

The Model 4640 precise bevel angle control insures a consistent edge angle along the entire length of the blade with each use. Its multiple stages are not only for sharpening different edge angles, but also work together with the precise bevel angle control to create a double-bevel edge that is stronger and more durable than typical V-shaped edges.

How It Works: The initial sharpening stage for each edge type sets the first bevel. Stage-1 is the initial stage for sharpening 15 degree class knives and Stage-2 is the initial stage for sharpening 20 degree class knives. Stage Three is used on both edge types to hone, polish and create the second bevel. (The third stage is also used to sharpen serrated edges). The result is an extremely sharp, burr-free and arch-shaped knife edge that resists dulling longer.
