The Chef’sChoice Professional Sharpening Station 130 is a breakthrough in sharpening technology. Providing all your sharpening needs in one easy-to-use sharpener. In seconds it will sharpen, steel and strop all brands and types of knives, including straight edge or serrated, kitchen knives, sports and pocket knives.

With this easy-to-use 3-stage professional electric sharpener, you can customize the edge for all your cutting tasks, whether it’s a flawlessly polished, incredibly sharp fine edge, ideal for gourmet food prep or typical cutting tasks or the ultimate steeled edge in with ultra-sharp micro-serrations provide an edge that is perfect for trimming meats, cutting highly fibrous foods and field dressing. You can even resharpen dull serrated edges. To quickly obtain a flawless edge used in precision slicing, use stages 1 and 3 .

In Stage 1, precision guides grip your blade at just the right angle and 100% diamond coated abrasive disks shape and sharpen the knife edge. Pull the blade slowly and smoothly. One or two alternating pairs of pulls in Stage 1 is usually all it take to shape and sharpen the edge. Once you feel a burr along the entire edge, proceed to Stage 3, the finishing stage. In Stage 3, flexible disks use ultra-fine abrasives to polish and strop the edge. About three or four pairs of pulls will polish the edge to superior sharpness.

Now that your edge is razor sharp, it’s a pleasure to use. This easy-to-use multi-stage sharpener delivers an ultra-sharp, gothic-arch shaped edge that is stronger and more durable than conventional hollow ground or “v”-shaped edges.

Almost everyone has experienced the frustration of trying to correctly use a butcher’s steel, with the Model 130 can easily create a perfectly steeled edge that can provide the extra bite and unprecedented sharpness that professional butchers prefer.

The secret is in the precision angle guides. To obtain this ultimate steeled edge, first sharpen in Stage 1, then proceed to Stage 2, which features a miniature steel of high carbon alloy that is much harder than any commercially available cutlery. Precision knife guides in this stage control and align the knife. A few pairs of pulls will easily develop a super sharp, steeled edge with perfect control for cutting, trimming or slicing.

The Model 130 also sharpens, straightens and realigns the teeth of serrated knives in Stage 3. Cutting and slicing is now a breeze.
