Yields

Makes eight pies.

Ingredients

1 can refrigerated biscuits (such as Pillsbury Juniors® or Pillsbury Grands® cut in half)

2 Tbsp. olive oil

1 lb. extra lean ground beef

1 cup onions minced

1 Tbsp. minced garlic

Salt and pepper to taste

2 Tbsp. all purpose flour

½ cup beef stock

1 cup frozen mixed vegetables

2 Tbsp. chopped parsley (optional)

2 cups shredded yellow cheddar cheese

2 cups seasoned mashed potatoes

Directions

1. Preheat pie maker. When the green light comes on, the unit is at the proper baking temperature. While the pie maker is heating, let your biscuit dough come to room temperature and make filling.

2. Heat oil in a skillet over medium high heat until it sizzles. Add onion and a pinch of salt. When onion is translucent, add garlic and ground beef. “Crumble” and stir until the meat is browned. Add salt and pepper. Drain fat. Add flour and stir until the mixture has a paste consistency. Add beef stock to pan and stir until creamy. Remove from heat and stir in vegetables.

3. Reheat mashed potatoes in microwave. Season to taste.

4. Roll biscuit into a 5-inch circle. Use the pusher to gently form the biscuit into the well. Repeat process with the remaining biscuits.

5. Fill with 1/3 cup meat and vegetable filling. Add ¼ cup mashed potatoes. Top each pie with 1 Tbsp. of the cheese. You can reverse the order if desired. Add the potato then the beef filling and sprinkle with cheese.

6. Close lid and bake pies for about 8 minutes. If not done to your liking, close the lid and cook another couple of minutes.

7. To remove pies, use a fork to slightly lift the edge of the pie. Slide small spatula under the bottom of the pie, lift out and transfer to a cooling rack. Repeat the process to use the remaining biscuits and filling. Adjust the cooking time as necessary.
