The Chef'sChoice high performance "Trizor®" edge can be applied in seconds using the 3-Stage EdgeSelect-Pro™. Featuring separate sharpening and honing stages, 100% diamond abrasive sharpening stages and precision angle control for foolproof results, it creates an incredibly sharp, durable, triple beveled edge that is longer lasting. Users can also optimize the edge for gourmet, butcher, sporting and serrated knives.
The High Performance Edge: The Trizor® "Gothic Arch" shaped triple beveled edge is created by using the three successive stages. Stages 1 and 2 sharpen and hone the edge with Chef'sChoice® signature 100% diamond abrasives. Stage 3 uses advanced, flexible abrasive disks to polish and strop the edge to shaving sharp perfection. Stage 3 is also used to sharpen serrated knives; it sharpens, straightens and realigns dull bent teeth creating microblades along the "teeth" of the edge. It is a very gentle but effective abrasive that helps prolong the life of serrated knives.
Edge Customization: The EdgeSelect-Pro™ allows users to customize the edge for the intended cutting task by using the sharpening and honing stages in different sequence. Stage 1, 2 and 3 are used to apply a super sharp, flawless edge for effortless cutting. Using only Stages 2 and 3 will provide a fine, non serrated edge with a residual "bite." The bite iscreated by polished micro flutes formed on the facet surface by the ultra-honing action of Stage 3 stropping disks. These sharp flutes on each side of the edge are ideal for more difficult cutting tasks such as meats, more fibrous foods, stalky vegetables and dressing of game.
